摘要: Maltose and glucose fermentations are strongly affected by the structural complexity of nitrogen source presence oxygen. In this study five industrial Saccharomyces cerevisiae strains were grown in synthetic medium, containing maltose or glucose, supplemented with different sources, without agitation. All able to grow efficiently ferment but not all well. Peptone ammonium sulfate induced improved fermentation for conditions. Under agitation, as expected, higher biomass accumulation was detected. Casamino acids supplementation efficient under aerated conditions, differing utilization patterns observed static cultures. Copyright © 2012 The Institute Brewing & Distilling
