摘要: In this study industrial strains were inoculated, in successive cycles, at high cell density into a sugarcane-based juice containing normal (22%, w/v) and very sucrose (30%, levels supplemented with peptone as nitrogen source. At 30 °C, shaken cultures, the gravity situation, efficient utilization occurred both unsupplemented medium. higher sugar concentrations, supplementation induced more fermentation compared medium, biomass accumulation maintenance of viability, ethanol 16% (v/v). Trehalose was also during probably necessary response yeast to stress conditions. This suggests that it is possible increase production by using very-high-fermentation technology nutritional would have positive effect on fermentation, allowing for consumption viability maintenance.
