Emulsifying properties of gum kondagogu (Cochlospermum gossypium), a natural biopolymer

摘要: BACKGROUND: Natural polymers are widely used as emulsifying agents in the food and pharmaceutical industries because of their low cost, biocompatibility non-toxic nature. In present study, properties novel natural biopolymer gum kondagogu (GKG) were investigated. GKG solutions different concentrations (0.1–0.6% w/v) prepared water emulsified with liquid paraffin oil (40% v/v) a high-speed homogeniser. Flow emulsions measured using rheometer. Emulsion stability droplet size distribution determined by visual observation, photomicrography laser-scattering particle analysis. RESULTS: The showed pseudoplastic behaviour. droplets viscosity at 0.4–0.6% w/v little change over time (up to 30 days), indicating that stable. Measurements zeta potential adjusted pH, without added electrolyte, stabilisation was due mutual repulsion between electrical double layers particles adsorption macromolecules on droplets.
