摘要: The aim of the present study was evaluation nitrate, nitrite, nitrosodiethylamine (NDEA) and nitrosodimethylamine (NDMA) intake by food consumption. We determined concentrations nitrates, nitrites in 102 samples (40 meat products, 15 fermented cheese, 25 vegetables, 22 fruits) concentration NDEA, NDMA 40 products. Nitrates were using Peter-Griess method; nitrosamines quantified HPLC with UV detection. designed vegetalian, vegetarian conventional diets about 2500 kcal/day. Based values found, we calculated nitrosamines. obtained fits to WHO’s recommendations, except for vegetalian diet, which nitrate content 3,46 respectively 1,64 times higher than acceptable daily (157 mg NO 3 - /day).
