摘要: The influence of NaHCO(3) and citric acid on the antibacterial activity apo-ovotransferrin in model systems ham was investigated. 20 mg/mL ovotransferrin solution with added (0, 25, 50, or 100 mM) (0.25 0.5%) evaluated against Escherichia coli O157:H7 Listeria monocytogenes brain heart infusion broth. antimicrobial saturated Fe(2+) Zn(2+) both pathogens also measured. In addition, solutions containing either mM 0.5% were applied to commercial hams inoculated E. L. stored at 4 degrees C for wk. increased as concentration increased. Sodium bicarbonate (100 significantly improved monocytogenes.
