摘要: Abstract Salmonella enteritidis can contaminate the contents of clean, intact shell eggs as a result infections reproductive tissue laying hens. The principal site infection would appear to be upper oviduct. In egg most important sites contamination are either outside vitelline membrane or albumen surrounding it. fresh eggs, only few salmonellas present and is an iron-restricted environment, growth will occur once storage-related changes permeability, which allow invade yolk contents, have taken place. When this happens high populations achieved in both albumen. Some from naturally infected hens been found contain large numbers S. enteritidis. rate change permeability temperature-dependant. stored at 20°C, invasion uncommon until for 3 weeks. simulated kitchen conditions where temperatures reached 30°C, could grow rapidly after days.
