摘要: Protein oxidation, the process caused especially by reactive oxygen and nitrogen species, is thought to play a major role in various oxidative processes within cells implicated development of many human diseases. This review provides brief overview protein oxidation with emphasis on types (oxidation backbone amino acid residues side chains, site-specific metal-catalysed oxidation), oxidationdependent generation hydroperoxides, carbonyl derivatives protein-protein cross-linkages. Nonenzymatic glycoxidation (also known as Maillard reaction) an important factor damage, consequences impairment related diseases well means monitoring assessment modifications are discussed.
