摘要: The degradation kinetics of carotenoids in dehydrated pumpkins, stored at 4, 25, and 40 °C under air or controlled atmosphere conditions (N2), was evaluated using reversed-phase high performance liquid chromatography coupled with diode array mass spectrometry detectors. degradations predominant including β-carotene, α-carotene lutein depended on the storage temperature, duration as well presence oxygen, which following first-order kinetics. temperature dependence reaction constants were explained by Arrhenius relationship. activation energy (Ea) for ranged from 23.69 kJ/mol N2-packaged pumpkins to 13.82 kJ/mol β-carotene air-packaged samples.
