“Food is Environmentally and Culturally Specific!”: A Preliminary Qualitative Study on U.S. Immigrant Parents’ Perceptions of School Lunch

摘要: Children spend most of their day hours in school, so the dietary choices they make during school days are important for childhood development and later life. This research examined food among immigrant families with school-age children Indiana, USA. Open-ended questions were answered by 52 parents 2017. Parents who had classes ranging from kindergarten to grade 12. NVivo 11 was used initial analysis dataset, several themes identified. After analysis, data categorized into major condense themes. Thirty-eight (73%) respondents indicated that ate lunch, 14 (27%) prepared lunch eat at 39 (75%), mostly non-industrialized countries, home-country staple foods dinner on non-school days. schools serving needs varieties lunchtime.
