摘要: Publisher Summary Collagen is one of the major structural components both vertebrates and invertebrates, found widely in skin, bone, other connective tissues. Gelatin, on hand, a class protein fractions that have no existence nature, but are derived from parent collagen, by procedures involving destruction cross-linkages between polypeptide chains collagen along with some level breakage bonds. Most commercial gelatin obtained mammals, mainly bovine hide, porcine skin. In recent years, studies seafood processing by-products drawn extensive interest, part due to requirements for kosher halal food product development consumers' concern Bovine Spongiform Encephalopathy (BSE, “mad cow disease”) products mammals. This chapter discusses manufacture by-products; chemical, physical, nutritional properties marine gelatin; non-food applications gelatin. The uses pharmaceutical industry, photographic technical fields such as paper printing processes.
