Acrylamide exposure from foods of the Dutch population and an assessment of the consequent risks

摘要: At the end of April 2002, Swedish Food Administration reported presence acrylamide in heat treated food products. Acrylamide has been shown to be toxic and carcinogenic animals, classified by WHO/IARC among others as 'probably for humans'. The purposes this study were firstly analyse contents most important foods contributing such exposure, secondly, estimate exposure a representative sample Dutch population, thirdly public health risks consumption. We analysed content with an LC-MS-MS method. results then used consumers who participated National Consumption Survey (NFCS) 1998 (n=6250). was estimated using probabilistic approach total population several age groups. For 344 products, amounts ranged from <30 3100 microg/kg. Foods highest mean potato crisps (1249 microg/kg), chips (deep-fried) (351 cocktail snacks (1060 gingerbread (890 microg/kg).
