Physical, biochemical and antioxidant properties of some Indian honeys

摘要: Abstract The study was intended to characterise the physicochemical and antioxidant properties of some commercial brands Indian honeys. All samples showed considerable variations with reference their level total phenolics, protein, radical scavenging activity, ascorbic acid equivalent content (AEAC) ferric reducing potential (FRAP). Comparative studies honeys indicated strong correlation between proline AEAC as well 2,2-diphenyl-1-picryl-hydrazyl (DPPH) activity whereas phenol strongly correlated FRAP values. Thus, overall seems be contributed by contents. Besides these major factors, colour pigments (ABS460) were also found contribute significantly observed activity.
