Molecular weight and amino acid composition of glycinin subunits

摘要: Glycinin, the major soyabean globulin, is composed of subunits having molecular weights about 22,300, and 37,200. On basis amino acid analysis, six submits glycinin isolated by isoelectric focusing are all different. The ‘acidic’ have higher content glutamic proline, whereas ‘basic’ in hydrophobic acids leucine, tyrosine, phenylalanine, valine alanine.
