摘要: Abstract In this work, it is compared the performance of three commercial lipase preparations (Novozym 435, Lipozyme TL-IM, and RM-IM) in synthesis flavor esters obtained by esterification acetic, propionic, butyric acids using ethanol, isopropyl alcohol, butanol, or pentanol. A comprehensive comparison was performed verifying activities these enzyme versus different couples substrates, checking yields. general, longer acid chain, higher reaction Novozym 435 most efficient cases, only RM-IM offered better results than production ethyl butyrate. Reactions with showed highest conversion rates all biocatalysts.
