Comparison of the performance of commercial immobilized lipases in the synthesis of different flavor esters

摘要: Abstract In this work, it is compared the performance of three commercial lipase preparations (Novozym 435, Lipozyme TL-IM, and RM-IM) in synthesis flavor esters obtained by esterification acetic, propionic, butyric acids using ethanol, isopropyl alcohol, butanol, or pentanol. A comprehensive comparison was performed verifying activities these enzyme versus different couples substrates, checking yields. general, longer acid chain, higher reaction Novozym 435 most efficient cases, only RM-IM offered better results than production ethyl butyrate. Reactions with showed highest conversion rates all biocatalysts. Using optimal reactions catalyzed enzymes were optimized response surface methodology, catalytic biocatalysts repeated batches assessed. After optimization, yields 90% for enzymes, but TL-IM needed four-times more biocatalyst content other two preparations. kept over 80% its activity when reused 9 successive batches, whereas can be 5 times 3 times. to suitable
