摘要: Regulatory thresholds for allergenic foods have not yet been developed. This means that public and industrial risk managers do regulatory to decide if a content or level of contamination is acceptable not. For long time, data inadequate define safe food allergens. More more challenge from allergic patients are now available, this opens the possibility perform advanced allergy safety assessments. These can be used inform management decisions ultimately form basis thresholds. In chapter we describe three different approaches safety/risk assessment based on no/low observed adverse effect level, benchmark dose, probabilistic modeling. methods illustrated by examples real life possibilities limitations discussed. © 2014 Elsevier Inc.
