摘要: Food-derived bioactive peptides with ACE-inhibitory properties are receiving special attention due to their beneficial effects in the treatment of hypertension. In this work we evaluate impact a simulated gastrointestinal digestion on stability and activity two that derive from ovalbumin by enzymatic hydrolysis, YAEERYPIL RADHPFL.
