摘要: The inhibition of cholesterol autoxidation by nonsaponifiable fraction from rice bran oil (700, 1400, and 2100 ppm) was studied in an aqueous model system for 16 h at pH 5.5 80°C. Antioxidant effectiveness investigated following the loss formation 7-keto-cholesterol. changes levels vitamin E vitamers γ-oryzanol were determined during autoxidation. ppm treatment produced a 92% reduction 7-ketocholesterol, 1400 82% reductions 700 64% after h, whereas without fraction, samples showed almost complete degradation cholesterol. Vitamin decreased (P<0.05) all treatments, but not significantly reduced treatment.
