摘要: Abstract The encapsulation of essential oils using natural polymers has been shown as a promising alternative, resulting in their active compounds protection and increased the dispersion aqueous environment, thus enhancing functional ability. Thus, order to enable Lippia origanoides Kunth. oil antioxidant applicability, this work aimed develop nanogel from ρ-coumaric acid binding chitosan structure. obtained results by FT-IR 13C NMR showed formation between acid. presented efficiency 42 ± 2% 37 1%. DLS studies that particles environment had an average size 521.9 140.0 nm 794.6 209.5 containing encapsulated. encapsulated capacity 31.49 0.82% 53.48 mg nanogel/mg DPPH activities based on neutralization radical. In relation ability neutralize ABTS radical, activity was 444.8 trolox/g nanogel. means chemical modification with it possible obtain material capable improving applicability L. antioxidant.
