摘要: The galactooligosaccharides (GOS), a group of oligosaccharides, are not digerible carbohydrates (NDOs) and resistant to hydrolysis by intestine digestive enzymes with similar dietary fiber physiological effect. benefits ingestion arise from population bifidobacteria in the colon that suppress activity putrefactive bacteria reduce formation toxic fermentation products. Scopulariopsis strains showed good productivity β-galactosidase when grown semi-solid medium. aim this work was extract sp. evaluate temperature conditions, reaction time, lactose, enzyme concentration improve GOS production. Temperatures 35, 45, 60 °C, time at 12, 24 48 hours, concentrations 0.5 10 U.mL –1 , 10, 25, 40%(w/v) lactose solution (0,1 M acetate buffer, pH 5.0) were analyzed. optimum conditions 40% (w/v), 45
