摘要: Gas chromatography mass spectrometry (GC-MS) and headspace gas (HS/GC-MS) were used to study metabolites produced by Lactococcus lactis subsp. cremoris MG1363 grown at a temperature of 30 °C with without agitation 150 rpm, 37 agitation. It was observed that L. more organic acids under Primary alcohols, aldehydes, ketones polyols identified as the corresponding trimethylsilyl (TMS) derivatives, whereas amino acids, including fatty detected through methyl chloroformate derivatization. HS analysis indicated branched-chain 2-methylbutanal, 3-methylbutanal, 2-methylpropanal are degdradation products isoleucine, leucine or valine. Multivariate (MVA) using partial least squares discriminant (PLS-DA) revealed major differences between treatments due changes fermentation products.
