摘要: Cross contamination of allergen to other food products is a serious problem in the plant where many shared same equipment or processing lines. In order decide suitable cleaning method, understanding on adsorption onto food-contact surface required. this study, behavior tropomyosin, major shrimp, stainless steel was investigated using shrimp extract as sample material. It found that tropomyosin adsorbed favorably than proteins extract. Furthermore, extract, including hardly removed by water.
