摘要: Publisher Summary This chapter focuses on the heat and mass transfer in microwave processing. The characteristics of processing systems are considerable interest for materials development process engineering. ability radiation to penetrate couple with provides an attractive means obtaining controlled precise heating. Microwave appliances have three major components—a generator, a waveguide, applicator. It is important appreciate role each component understand how ovens operate.
