摘要: Red beet juice was clarified with microfiltration and the effects of operating parameters on clarification efficiency were evaluated. The red at transmembrane pressures 0.1, 0.5 1 bar two different flow rates (4.4 6 mL/s). Different mechanisms membrane fouling evaluated during process. results showed that best processing high pressure feed rate. most dominant mechanism process under standard blocking; however, rate, cake resistance main mechanism. Evaluation physicochemical properties decreased turbidity, as well total phenolic contents, soluble solid color. Also, evaluation nutritional value antioxidant betacyanin betaxanthin contents reduced. Practical Applications Concentrate extract can be used a natural colorant in food industry. Large particles adhered walls evaporators concentration cause off flavor. Current study remove large particles; hence, above-mentioned problems reduced. Efficiency limited by Experiments formation is mechanism, so washing velocity useful to repair efficiency.
