Enzymatic synthesis of kojioligosaccharides using kojibiose phosphorylase

摘要: Abstract We have attempted to synthesize kojioligosaccharides (oligosaccharides having the α-1,2 glycosidic linkage at nonreducing end) using two methods. In first, mixtures of various proportions glucose and β- d -glucose-1-phosphate (β-G1P) were allowed react in presence kojibiose phosphorylase (KPase). second, maltose was with KPase (MPase) simultaneously. former method, only glucosidic synthesized average degree polymerization (D.P.) oligosaccharides increased decreasing glucose. second obtained approximately 70% yields under optimum conditions. 4-α- -Kojibiosyl-glucose, kojitriose kojitetraose, principal synthesized, not hydrolyzed by salivary amylase, artificial gastric juice, pancreatic or small intestinal enzymes.
