Food Insecurity and Nutrition Transition Combine to Affect Nutrient Intakes in Canadian Arctic Communities

摘要: Food insecurity and the nutrition transition have been noted in arctic communities. We therefore evaluated biomarkers of nutritional status nutrient intakes by traditional food (TF) security among Inuit Canada. A cross-sectional health survey (≥18 y) 36 communities was conducted 2007-2008. assessed 24-h dietary recalls using USDA questionnaires intakes. Biomarkers included serum 25-hydroxy vitamin D [25(OH)D], hemoglobin, ferritin, erythrocyte RBC fatty acids (FA). Analyses were stratified past-day TF consumption (yes vs. no) (secure insecure). prevalent (62.6%) associated with higher trans-FA lower hemoglobin levels whereas 25(OH)D, (n-3) FA, ferritin (P ≤ 0.05). In men, intake energy energy-adjusted fiber, C, iron, zinc, magnesium. women, a carbohydrates folate equivalent, magnesium, calcium, D. For both sexes, when consumed, there protein, protein-related micronutrients, vitamins C carbohydrates, saturated fat, fiber sodium:potassium ratio Nutrition are multifaceted shift implications for increased risk diet-sensitive chronic diseases.
